Sappers corriander Chicken.

now this is a favorite i made when working at differant resturants. paying customers loved it.
you need 4 - 5 chicken breasts
Medium bunch fresh corriander
I lemon
1 Lime
2 red chillies
2 pints grapeseed oil
2 cloves garlic (sweetest one you can buy)
1 pint of water (boiled and left to cool)
Take chicken breast and the under side score with a sharp blade 1/3 depth
coarsely chop the corriander leaf (remove any stalk)
in a oven proof dish pour in water, grapeseed oil, all the juice of the lemon and lime.
finley chop Garlic and chilli add to the mixture.
gentley sir mixture with a fork (should go cloudy)
then add all the corriander and mix again
place in the chicken smooth side up into the mixture leave for 30- 60 mins to marinate.
place in a hot oven for 1 hr 40 mins ( 190 temp)
Roast some small potatoes with the skins on and slightly salt.
serve with vegatables.
(The cloudy mixture will become clear when cooking) this can be served as a sauce with the chicken.
Enjoy this is a very filling meal. and all the flavours do work together.
