Carolina Barbecued Pork

There is nothing I enjoy eating more than a good Carolina Barbecue Pork Sandwich! MMMMMMMMMM I'm getting hungry just thinking about them.
My wife found the recipe many years ago in a cookbook that came with a Crock Pot. Since then it's been a tradition to make this every Christmas and for my birthday. It doesn't quite fit into the category of "Barbecuing", like on a grill, but it is barbecue none the less.

Here's the ingredients:

The meat is a 4 to 6 pound boneless pork butt or shoulder roast

2 onions, quartered
2 tablespoons brown sugar
1 tablespoon paprika
2 teaspoons salt
1/2 teaspoon pepper
3/4 cup cider vinegar
4 teaspoons soy sauce
4 teaspoons Worcestershire sauce
1-1/2 teaspoons crushed red pepper flakes
1-1/2 teaspoons sugar
1/2 teaspoon dry mustard
1/2 teaspoon garlic salt
1/4 teaspoon cayenne
a dash of hot pepper sauce

Place onions in Crock Pot.
Combine brown sugar, paprika, salt and pepper; rub the mix into the meat.
Place meat in Crock Pot on top of the onions.

Next . . .
Combine Vinegar, Worcestershire sauce, soy sauce, red pepper flakes, sugar, dry mustard, garlic salt and cayenne. Stir until mixed well. Drizzle about 1/3 of the vinegar mix over the meat. Cover and refrigerate the remaining vinegar mix.

Next . . .
Cover and cook on low for 8 to 10 hours (High 4 to 6 hours). In the last 1/2 hour of cooking, drizzle another 1/3 of the vinegar mix over the meat.

Last . . .
When meat is cooked, remove it and the onions and drain. Shred the meat and chop the onions.
Serve the meat and onions on large soft sandwich buns. Top with coleslaw if you like. Drizzle the remaining vinegar mix over the sandwiches.

Makes 10 to 12 servings.

Ok i need you guys in the u.s. to clear this up... i wanna try this recipe in my slow cooker (carolina barbecue pork)... im a slow cooker noob :oops: does it matter how much fluid/ juice is in the bottom ? pot roast not sure what it means....oh and any MANS recipes for the slow cooker are appreciated ! lol

You use a 4 to 6 pound boneless pork butt or shoulder roast.

You start out with the minimal liquid shown in the recipe. The meat juices will add quite a lot of liquid.

Pork Shoulder Roast
A Pork Shoulder Roast is an inexpensive cut of pork to buy, because it is relatively fatty.

Sounds delicious... I thought we were the only one that still owned a crock pot :lol: :lol: :lol: . Will have to get wifey right on this one... I can smell it now... mmmmmmmm :D :D :D.

Bubba,

Our local market "Fry's" had a buy one pork get another free, so on Sniper Sunday wifey made the BBQ. You were right.. that is a fatty piece of meat, but still tasted delicious. :) :) I guess I am more of a KC Masterpiece kind of BBQ guy, though... :shock: :o ... nonetheless, we are still eating on it, and that vinegar taste is starting to grow on me... good recipe!!

I was never that crazy about Ketchup based barbecue sauces mainly, I guess, because I'm not a big Ketchup fan. My wife uses it on Everything . . . even eggs! HOW DISGUSTING!!!! She even puts Ketchup on sliced tomatoes . . . talk about overkill!!

I am, however, a lover of mustard/vinegar based barbecue sauce and the spicier, the better.

By far the best barbecue sauce I have ever had, and I've had a lot of it, is made right here in Lake County, Florida in a small town called Eustis. It's called "Kings Taste Barbecue Sauce". It is most definitely a mustard/vinegar sauce and you can get it in mild or "burn your ass out" hot.

The nice thing about this sauce is you can soak your meat (beef or pork) in it and the meat will absorb it. When you grill the meat, especially ribs, the taste will knock your socks off.
